You might also give this a whirl with a tri-tip roast instead of chuck. Magnitudes better, in my opinion.

Agreed on both counts. I prefer the texture of tri-tip over chuck and the absence of fatty chunks mixed in with the roast (I trim the fat cap off my tri-tip prior to cooking).
