Easy peasy when they're fresh.
Dehead and pull the guts out Or, just pull the gills and guts out and leave the head.
Roll, dip or coat in your favorite batter/breading stuff.
Fry until golden brown.
Don't think I've ever pulled them out of the freezer to cook, shouldn't be too hard for an Eskimo fella to figure out how to deal with frozen fish though.
