The thing with making great soups at home, besides the steps and time involved in making it, is the amounts of stuff you have to buy to make a proper one. Take carrot, celery and onion for example (a common base to a lot of
Soups) - you gotta buy a head of celery because they don’t sell it buy the rib, a whole onion, and an average sized carrot, and you’re already looking at more than a meal sized yield before you even start getting into whatever else is going in. So when I make a soup, it’s going to have to be a main course for a matter of days. I guess I don’t know how to small-batch them.

Pretty easy just to pop a can of something for a one-and-done.
