In Eastern WA we liked to eat young jacks about the size of a cottontail or smaller. They were tender and tasty with a slight sage taste. Full grown jackrabbits were tough and tasted of sage so strongly we only tried eating one or two.

They were long legged, long eared critters that did not turn white in winter and looked like the ones huntsman22 is posting.

Is this a big year in rabbit cycle all over? There were the most snowshoe hares I've ever seen in the places where I hunted mule deer in the Interior of BC this Fall.
