I have some PA Dutch friends from Lancaster County that turned me on to sweet bologna years ago. That, farmer's cheese and cornbread made with roasted cornmeal is some good schitt.

They gave me the recipe for the sweet bologna. I haven't tried it yet. It's a pretty simple process. It's basically 30# of ground beef and sugar cure. Stuff it into cloth sausage sacks and let it cure with a day of cold smoking sometime before it's ready. I plan on mixing in some moose meat with it to see how it turns out. I just need to get a meat mixer first.
