Read the Lewis and Clark journals about wintering on elk. It took 3-4 lbs a day per man plus whatever fish they could scrounge. Fat was a issue for them.


Wintering on the "pore elk" at Fort Clatsop wasn't much for eating according to the journals of Lewis and Clark. And they ate a bunch of them. They couldn't wait to get back to the fat plains of the Missouri for some decent meat(with fat).

Lean meat is a selling point nowadays. Back in the day, and up north, it could kill you, if that's all you had.
