This last beef we had killed I specifically asked for the heart, tongue and tail.
They wont let me bring liver into the house anymore.
They said dont ask about the kidneys.
Should keep me occupied until the hog heads start showing up at Walmart again.
Going to make either scrapple or souse this time. Might need two heads......
I’ve never tried souse, sounds interesting. Oxtail soup is fantastic, one of my favorites. In my younger years I worked at a meat packing plant, every Saturday afternoon we worked we would make oxtail soup, and we had our pick of meat. Egg noodles, carrots, pepper, oxtail in a crockpot.
I can’t do liver, skinned enough in my life I can’t stand the smell. Heart is good just fried with onions.
