I’ve never tried souse, sounds interesting. Oxtail soup is fantastic, one of my favorites. In my younger years I worked at a meat packing plant, every Saturday afternoon we worked we would make oxtail soup, and we had our pick of meat. Egg noodles, carrots, pepper, oxtail in a crockpot.

I can’t do liver, skinned enough in my life I can’t stand the smell. Heart is good just fried with onions.
