Years ago, I had a "Seconds" Cold Steel Recon Tanto Carbon V. I gutted my first cow elk (including opening up the sternum) and afterward it "would still shave"! I was impressed for a $25 knife at the time, lol. It cut that old cow elk "like butter"! I moved on to a Sam Mai Outdoorsman. I like Benchmade McHenry/Williams for EDC.
