Big ziplock bag, dump in half a bottle of fleishman's corn starch, hand full of AP flour, however much smoked paprika looks right.

Shake 'er up, to mix, add slightly damp fish & shake to coat.

Eggs, cream, lots of cracked pepper & a splash of lime juice (or replace the cream & lime with buttermilk) for the egg wash.

Out of the ziplock on to board or platter, egg wash & double coat again in the ziplock.

Bit of time, uncovered in the fridge, helps coating set up a bit !
