Many of these Jews were of Italian descent.From what I read many years ago the rules for inclusion into the Italian Mafia were loosened to include members of partial Italian ancestry.This may be the reason many of these Jews were members of the Italian Mafia.

It's been a long time since I read books about the Mafia and most of the titles have been long forgotten.I do remember Costra Nostra,The Valachi Papers and The Black Hand though.
