I swung by Uvalde today, and picked up my pork. They do have a pretty impressive operation. Good sized building, and they are also a retail meat market, not just a wild game processor. You can look into the meat cutting area, and it appeared to be very clean and well organized.

I've not been to Uvalde previously. They have a place there on the main highway called the Oasis, which is sort of a mini Cabelas and Buc-ees rolled into one, but with a sit-down restaurant in the middle of the store. They had a good gun shop, with reloading supplies and a decent selection. They had Model 70 I'd not seen before; a Super Grade with a maple stock (quite nicely figured, too). It was a Portuguese model in .270; with 22" barrel (bummer). Were it a 7x57 I might have bought it.
