Beautiful. Tell me, since i now consider you an expert, what do you think about an old man telling me once that the dark honey was, i dont exactly remember, either the best tasting or more nutritious.

What say you? What flowers makes that beautiful honey?


Well, let me start by saying that I've been doing this for 10 years, and I am far from knowing all that goes on inside of a beehive. We think that the light honey is from corn tassles, ash tree flowers, and possibly dandelions but we really aren't sure. Some years we get darker honey that we attribute to clover, and the taste is a bit different, not bad, just different. You can have different colors of honey in the same hive, depending on which plants/flowers the bees are visiting, and where in the hive they're working. It's a complex ecosystem to say the least. The majority of what we get is light honey, and the taste has always been very good.
