I had made a pot of sauce from ground elk and elk Italian sausage last Sunday. This afternoon my wife and I made ricotta. This evening I assembled it all with grated soft Asiago and mozzarella (which we thought about making). She tossed a salad of greens from the garden, tomatoes, bellpepper, cucumber, Feta, olive oil, vinegar, salt and pepper. It was killer.
