S&P and brown thighs in dutch oven in EVOO, sauté alot $$$ of shallots in fond add enough of your favorite Lodi white Zin to come half way up thighs mix in couple gobs apricot preserves and chopped up dried apricots into wine. Sprinkle in chopped fresh sage leaves. Cover toss in 350 oven until done. More Zin to deglaze and make thick sauce.
