Been reading about tri tip for years and realize it's a popular Santa Maria style of cooking indigenous to an area of California .What cut of meat is tri tip called for those of us outside the area ?
Tri-tip is ubiquitous now. Its my understanding that a large quantity of the cut are shipped to the Western US instead of being used for other cuts or groundup because of the demand.I believe some of the tri-tip cut is used as "Steak Tips" cut on the East Coast. Triangle roast is also another name.
