Wife cooked up a bunch of chicken breasts the other day so they wouldn't go bad. We had some leftover chipotles in adobo from some chili she made last week. I had purchased some wonderful corn tortillas at the Mexican market a week ago and wanted to use them up before they went bad. Got to thinking? Hmmm, enchiladas?

made some very non traditional chicken enchiladas tonight. Used the mini food processor to grind up the chipotles, a canned green chile, some spices, some broth left over from the cooked chicken and whipped up some enchilada sauce. Cut up some chicken breast, some baby bell peppers, some Kalamata olives, some green chiles, and some onion and sauteed it all. Decided it was too much work to individually moisten and roll tortillas, so I did the enchiladas "pie style" with some Skellig Irish cheddar inside and some good farmers cheese on top:
