That would be the wife’s three cheese roasted poblano pepper relleno casserole. Sometimes she puts a layer of browned ground beef in it but it was meatless this time. Still one of my all time favorite dishes. Pic don’t include the ranchera sauce.
I thought the peppers were spinach. That's even better though. Chili Relleno's are my favorite Mex food so I'm sure I could put a dent in that batch given a chance.
No doubt you could. She also makes them the traditional way very light and fluffy not greasy at all.
