Buddy of mine had a steer butchered and asked me if I wanted the neckbones. Heck Yea I 'll try them. My wife got them out and seasoned and floured them. Browned in olive oil in a cast iron dutch oven. Cooked down some onions and garlic. Deglazed the pot with red wine. Put the onions and meat back in the pot covered with beef stock. Simmered 4 hours. Man was it good. Tender and rich tasting. Nice thick brown gravy.
