I finally got around to pickling and cooking the tongue from the last cow we slaughtered (we raise Florida Crackers). My dad had a fall (he's almost 92 and has had a few hip replacements, so it's a bit of a big deal even though he only had a bump on his noggin this time) and I wanted to raise his spirits, and a good deli sandwich with real pickles is what he loves.

I made a few extra sandwiches for dinner and they were so damn good....a bit of spicy mustard on one piece of bread, grainy mustard on the other, homemade sauerkraut next, then slices of tongue. Add a couple of pickled tomatoes/cukes from the garden, and it's as good as it gets.

The pictures didn't come out well, but holy cow (literally), those sandwiches are amazing.
