Locally grown (well, within 50 miles or so, but out here that's local) uncured ham shank. Grilled over oak coals to get some smokiness.

If you look closely at the pic above, you'll see I had to trim some chicharones off the right side there........................they were delish!

Then it went into a pot of collards and beet greens from the garden

My sister told me she "wished I was her chef" when I sent these pics to her.

Wasn't done in time for dinner tonight, so we'll have it tomorrow..........................but it might have to get sampled for breakfast!
