Then taste the water before using for blending. Many times it will be bitter. If it is then use your pork stock for blending or a combo if the soak water tastes ok.

Strain chilies through fine sieve before using.

You can add another depth of flavor if you slightly roast the dried chilies before soaking.

Fats is correct. It’s best practice to strain the blended peppers as sometimes they can be bitter. I think it’s the skin that’s bitter. And the sieve will filter the skin out.
