Could not get at pics for some reason on my tablet yesterday.
Our scallops are frozen. Nothing wrong with that. As mentioned, avoid the sodium phosphate (wet variety) if you can. The 'dry' (untreated scallops) are preferred.

Grilled an bacon wrapped. Use the pre-cooked bacon otherwise tha scallops are wristrocket ammoby the time the bacon is cooked.

Used a smaller CI here to keep them over the heat.

Sometimes I use a biggerCI.

And sometimes I de-glaze the pan w/ white wine and the scallop juice (left in bag after defrosting)

About the only wrong way is to overcook.
