I used a 4 pound chunk of chuck, cleaned it up totally, cubed and browned it. Braised the cubes in a bit of red wine and stock before making the soup

The extent of food production we do would blow your mind.

We don’t buy ground beef. We buy 2 piece boneless chuck or chuck rolls 70 pounds at a time, and grind our own. Saved 4 pounds for the soup.

For Italian Sausage, we bone out 70 pound cases of butts, grind, season and stuff hog casings
