Thanks for posting this. I've got several neck roasts that I've been kicking around low and slow ideas for, but think I will try this with one of them.


Shaw uses a shoulder roast in the recipe and I found a neck roast took about an hour longer. I cooked mine in an enameled dutch oven in a 300 degree oven rather than a crockpot, roast wouldn't fit in the crockpot. I also browned the roast on all sides first (habit).


I used two chipotle peppers in adobo sauce (my wife freezes them individually). It was spicy and had some heat but not over the top. Using 4 peppers would have been hotter than I like.


Finally got a chance to make this over the weekend. Outstanding.
