I didn't post this yesterday. Got this idea from meatchurch. Smoked salsa. Smoked 12 tomatoes, 5 jalapeños, 1 onion and a head of bisected garlic (in foil) for a few hours. My smoker got up to 250 so, mine was close to 1.5 hrs. Squeeze garlic cloves out and blend all of above with one bunch of cilantro, juice from 1/2 lime and 3 tbsp salt. Can't stop eating it. Kinda spicy but very palatable.
