No recipe. Diced Scallions, green pepper, celery, garlic, juice of 1/2 lemon, a dollop of mayo, some cajun seasoning, salt, pepper, 2 or 3 eggs, crawfish tail meat and start adding breadcrumbs until you get the consistency to hold together. After cakes were made I put them in the fridge for about 20 mins and they binded up even more. Sprinkled some blackened seasoning on them and sautéed, about 5 min a side in a mix of butter and olive oil. Easy weeknight meal.
