Zucchini guts, ground beef, bread crumbs, parsley, basil pesto, garlic, tomato sauce, salt and pepper. I mix up my first attempt and cook a 1" diameter patty and taste then tweak, repeat as necessary just as I do with my meatballs. Just tonight we had friends over and my wife made zucchini pancakes seasoned similarly with flour replacing bread crumbs and egg added. Those fried in grape seed oil and a tomato, bell pepper, red onion and cucumber salad with EVO, red wine vinegar, salt and pepper soaked in the fridge for a couple of hours left a group of happy campers.
