I picked up my youngest son and DIL from the Spokane Airport today for a weeks visit. Today is her birthday, 25, and she was craving (5 months pregnant) chicken parmesan. I bought all of the kit yesterday and my son just nailed the meal. His "trick" (I have seen on the cooking channels) is to fry one breast at a time to keep the pan hot then throw it in the oven to keep warm. Crispy yet tender.
