I know what you mean about the barley swelling....my recipe yields about 1.5-2 quarts of soup....that's with 1/4 cup of barley....
Due to scar tissue in my throat caused by radiation treatments a decade ago I like my soup a little on the mushy side so I soak the barley like you would beans....
