Here's what I did, from memory.

Sautéed 1/2 onion, 1/2 red bell pepper, 1/2 orange bell pepper and 2 sticks of Celery, finely chopped. Got them softened up, added some garlic, chopped parsley and a few chopped green onions and then took off heat and cooled.

Chopped up two pounds of crawfish tails, mixed with above, and a healthy done of Cajun spice, salt, 3 eggs, some breadcrumbs, about 1/4 cup creole Mustard and 1/4 cup mayo. Make patties and sautée in hot oil/butter.

Mix 1 cup of mayo with juice from 1/2 lemon, and some Tabasco. Add smoked paprika, garlic and onion powder and salt and pepper. Mix and let it refrigerate for 1 hr to let come together.
