Last night was pork centre loin, cut into 2 finger thick "steaks", S&P & sprinkle both sides with smoked paprika.

'bout 2 minutes a side in a smoking hot cast iron pan & then into a warm oven for 5 minutes, remove, tent & let rest for another 5.

Sides were sautéed sweet peppers & thin sliced cremini mushrooms, finished with a good dash of balsamic vinegar & sweet potato medallions (skin on), roasted at 350* in a little Olive oil & dab of butter + S&P.

Glass of Pinot Noir was a nice accompaniment !
