Told my wife about this thread and that EdM mentioned the veal.
She said..."Dummy, veal is the original "saltimbocca". What's wrong with you? "
I had no idea. Even though I was raised with Italian grandparents off the boat, I never learned names for a lot of this stuff. To me it was just "veal" or "chicken".
She also said tossing in the capers would be a good idea.
