That’s a great price. Gotta age them at least a month. If you watch Costco you can score Prime tritip cheap. I still age them a month also if I can.
A tritip is the bottom triangular cut from the bottom sirloin. Must be cooked rare to medium rare or it’s just a sin!!


Ive seen that a few times on different cuts from Costco where for whatever reason highly marbled prime cuts are sold at the choice price. However several years ago Costco started blade tenderizing most of their usda prime cuts. So I won't buy them anymore unless I find they haven't been microknife tenderized. Thats not good for cooking to a Rare-MedRare.

When I have the time I only let them sit in the fridge about a week.

Its really about how you cook and cut it to get a tender juicy flavorful product.
