They aren't too tough, as long as you don't over cook them.

Definitely more "chewy" than loin chops & yes, they are better suited to low & slow.

Stew/osso buco etc.

Asked Deb to grab some lamb chops out of the freezer for the BBQ & that was what she pulled out.
