Dinner: Lemon pepper broiled farm raised Mississippi Delta Catfish Fillets, cut green beans with new potatoes, garden salad topped with wild caught Gulf shrimp, Waldorf salad for dessert or Sweet Potato pie homemade with coconut and roasted pecans in it.

Cooked this afternoon also: Did a beef brisket in the oven in Grandmaw’s 8 Griswold cast iron skillet. First time, turned out great. Used a Texas BBQ specialty rub our grocery had. Spritzed with apple juice to prevent drying out Uncovered 2 hours, covered in foil, the rest. Low and slow. Also did hambone vegetable soup with golden potatoes, okra, ham bits, fresh tomatoes, frozen corn, peas, tomato paste, sauted onions, red and green bell peppers. Seasoned with salt, pepper, Lea & Perrin Worcestershire, liquid smoke- Ft Worth Stockyards variety. Served with cornbread - GF for the wife ( gluten intolerant). Choice for supper. Have out of town appointments Monday & Tuesday back to back. Meals quick and easy ahead of time.
