It's supposed to be a side dish but I put Collards in mine and make a meal out of it.

I know I don't have to say this but use good bacon.
If you're going to use collards look for either Glory brand Southern Style or Sylvias.
Don't bother making your own collards because you can't match either one.

I add one 14.5 oz can to half of a batch of this recipe.

Don't see anything wrong with putting collards in there. Heck, red bell peppers aren't on any recipes, either. But, I put them in my Hoppin John.
