I asked because tomato is on the dividing line between Cajun and Creole. Generally, the Creole versions of dishes have tomato and the Cajun ones don't.

If you look up pictures of these dishes you'll see reddish gumbo with okra, that's Creole. Cajun gumbo is brown and typically uses much darker roux. Creole jambalaya is red like the rice you get in Mexican food, Cajun jambalaya is brown like rice & gravy.
