Since they cook so quickly, I cooked them in the marinade & it tightened up perfectly.

Prawns first & remove slightly under done, scallops till almost done, prawns & some butter pats for the pan sauce.

Marinade was honey, evoo, 2 chipotles & some adobo sauce, salt & cracked pepper.

Steamed the rice in coconut milk.
