I miss Ontario walleye SO much!

I too was taught to use grape seed oil because of its high smoke point and the fact that its mild flavour didn't mask the flavour of really fresh mild fish like walleye.

If I wasn't cooking the fish in beer batter, I'd drizzle it with walnut oil mixed with a splash of dry sherry. I think your parsley oil sounds even better!

If you want to try walnut oil it is easier to find online than when I lived in Ontario Walnut oil online in Canada Very nice for oil and vinegar salad dressing too. Good for polishing your furniture and gunstocks as well!
