My wife and I like Lamb. The only local place to buy is at Sams. We like Boneless leg of lamb but lately the ones they have been selling are too big. and they didn't have chops so I bought one of the big ones. When I go it home I sliced it in 1" steaks and vaccum packed in packages what we wouldn't eat and froze. I cooked some of the steaks last night on the charcoal grill with a green hickory chunk for smoke. It wasn't as good as a prime ribeye. But they were darn good. Tender and tasted really good. I will definitely be doing it again.
