PS, Fat City.............................there's some carnitas makings there. My cast iron will be getting a work out this week. Gonna hafta whip up some homemade tortillas for that.

I just bought a big ol pork Shoulder roast myself a couple days ago.

I plan to use half of it to see if I can replicate Bob's Goulash recipe and the other half to make some "Hunters Sausage" I've been wanting to try. The roast doesn't have as much fat as I would like for sausage but it's 1/3 bacon so I think it'll be ok.

Hopefully I'll start feeling better and can get back on the job soon but until then it's a couple of scrambled eggs, cottage cheese and peaches, and chicken noodle soup and I don't mind telling you...........it's getting pretty dam old.

Took folks with medical degrees, testing labs at their disposal, etc 7 months to figure out what was going on in my guts. Well, some blame goes to the insurance companies for the try this/try that first before we authorize a colonoscopy. Oh, there was a little event called the Carr Fire involved too, only burned up a big section of Redding. Finally got that authorization and scoped, diagnosis in a coupla days after the biopsy, scrip for some steroids, and wonder of wonders 3-4 days later and I was back to normal. They tried no dairy, FODMAP diet, cut back on this, cut back on that. Pain in the arse not eating what I was used to/like to eat.

I hope the sausage comes out great, knowing you it most likely will.
